Hakka Moon Fun

Yum yum.... I love cooking Chinese food, and one of my favourite dishes is something my Por Por (Grandma) makes is mun fan (闷饭). It's crazily simple and although I don't pretend to make it nearly as good as she does, it's never a bad attempt! So I thought, as there's a real lack of Hakka dishes online, I'd share the recipe!

Ingredients:
Chicken legs or thighs (on the bone, it gives it more flavour)
Lap cheung (Chinese dried prok sausage)
Dried shrimp
Dried shitake mushrooms
Rice
Soy sauce

First, soak the mushrooms and shrimp in boiling water. Coat the chicken in the soy sauce and set aside.


While these soak, chop up the lap cheung and dry fry (you don't need to add oil to the pan, they are very oily as they cook). Set aside.

Place the chicken in the hot pan and fry until cooked.

Get the soaked mushrooms and slice into slivers. Do not throw the water away as this is added to the rice to add flavour.

Wash the rice, and add just under the recommended amount of water in the rice cooker. Pour in the water from the soaked mushrooms and shrimps. Lay the cooked lap cheung, chicken, soaked shrimp and mushrooms on top, along with some salt, soy sauce.

Once the rice cooker has finished, your mun fan is ready! Serve with stir fried greens! YUMMMMM!!
