Rainbow unicorn rice
🌈🦄 U N I C O R N R I C E 🦄🌈 . . . A lot of people have asked me for the recipe for my rainbow unicorn rice I posted at the weekend, so here's the recipe! I'm still to find a veg to colour rice green.... so watch this space! INGREDIENTS Purple cabbage Beetroot Tumeric Rice Get 3 separate sauce pans and lids. Chop the purple cabbage (about 1/4) and wash and place in one pan to boil until tender. Peel and dice the beetroot and place in the second pan to boil. In the third pan, place 1/2 cup of rice, wash until the water is clear, and then add 1 cup of water. Add 1 tsp of tumeric. Set to boil, then turn right down to low and cover with the lid to simmer until the water is almost all absorbed, then turn off and leave to absorb the remaining water. When the cabbage is cooked, place a jug in the sink and put a colander on top. Pour the cabbage water through the colander in to the jug and set the cooked cabbage aside. In the empty pan, place 1/2 cup of rice and wash it. Place 1 cup of purple cabbage water in a bowl, add some of the cooked cabbage and blend. Then add this to the washed rice, set to boil and then turn the heat to low and cover until partially cooked and then switch off to finish cooking. Repeat the same thing with the beetroot in the third pan.
