C R E A M Y V E G A N K A L E P E S T O . . . (Excuse the crappy photo!) This pesto is SO good for you and has a bite to it with the raw garlic. Tastes amazing and works well with other nuts if you don't want to use almonds! I reckon cashews would be brilliant in this recipe too. Plus the raw garlic is great for kicking colds and bugs!! Anti viral, anti fungal and anti bacterial! It's dairy and egg free too :) . . Ingredients 1/3 of a pack of raw kale 2 large peeled garlic cloves 1 cup of olive oil 1/2 cup of raw almonds (you could soak these) Juice of 1/2 a lemon Pinch of salt to taste . . Shove it all in your blender (I used my @nutribulletuk) and blitz until smooth... spoon on to cooked pasta. That's it!
