Vegan banana loaf cake!
Well it looks like Daisy may have grown out of her egg allergy, but until we get bloods back I'm not chancing exposing her. But I had a load of over ripe bananas to use up, so I decided to try out an egg and dairy free banana loaf recipe! Safe to say by the amount of cake both kids ate it's a hit!
- 225g Plain flour (or use Self-raising flour and reduce the Baking powder to 2 heaped tsp)
- 3 heaped tsp Baking powder
- 100g sugar
- 2 large over ripe bananas, mashed
- 75g Vegetable, coconut or Sunflower oil (weight)
- Combine the bananas (mashed) with the sugar and oil. Sift in the flour and baking powder and fold in. Put the mixture in a greased lined loaf tin and bake at 200c for an hour (I covered the cake with foil after half an hour to stop the top burning).
