Gluten, soya and dairy free biscuits

So munchkin is FINALLY eating. A massive achievement after a year and a half. Although she still has blips where she refuses all meals and mucks about with her milk, on the whole she eats "OK". Nowhere near enough to drop her milk but I'm never going to expect her to eat like a child of her age. The main battle now is finding foods she can eat with it ingredients that cause a massive eczema flare up. So far the blacklisted foods include all dairy, soya, wheat, maize, apple, banana, strawberry, blueberry and most recently broccoli. As you can imagine, pretty much every off the self food contains at least one of those ingredients! Most of the "free from" foods you can buy in the shops substitute dairy for soya! Now she's eating and wants what everyone else is having, I felt bad eating biscuits and snacks in front of her, so I had a go at making my own biscuits. They were such a hit with her I thought I'd share the recipe as I know how much of a challenge it can be to find suitable snacks for kids with allergies!


My attempt at gluten free biscuits! Made from rice flour and rice oil. No sunflower, olive, dairy, wheat, soya or maize! :) 

8oz rice flour 
2 tsp bicarbonate (chose this over baking powder as some baking powders have gluten or cornflour in them)
85ml rice bran oil (or you can use coconut oil or whatever fats/oils are suitable for your child)
6oz sugar 
3 big squirts maple flavoured golden syrup 
1 egg 

Sift and mix the dry ingredients. Add the oil and mix, then add the golden syrup. Whisk the egg and pour into the flour mixture a little at a time until you have a dough you can roll (you might not need the whole egg). Roll to 7mm and cut into shapes. Bake gas mark 7 for 10 mins!
