Dairy free Easter marshmallow rice Krispy nests
Easter is always a bit rubbish if your kids are dairy free... school Easter fairs are full of raffles and lucky dips for chocolate Easter eggs they can't eat. Easter egg hunts are for Easter eggs they can't eat. Well meaning friends and family buy them Easter eggs they can't eat. You have to have a stock of safe treats at home to swap out for ones with dairy. So this year I've tried to make Easter a bit more fun and make some dairy free treats together. First up... Easter nests!
50g vitalite or other dairy free butter alternative
150g marshmallows (we use Haribo Charmallows as they're also maize/cornflour free)
100g Rice Krispies
Melt the vitalite and marshmallows (we use the microwave, 60 seconds each ingredient). Stir in the Rice Krispies. Spoon equal amounts of mixture in to cup cake cases and make a dent in each with your spoon. Drizzle with melted dairy free chocolate (optional).
Lick all the bowls and the spoons!
You can decorate with little Easter chicks too if you like! Or we used polystyrene eggs as we can't eat mini eggs!
